This is a rich, broad blend roasted at a high medium temperature to keep, as everyone ought to know by now, from burning the beans and instead lighting a well-tempered espresso capable of competing with the best imports. To that effect, it presents a thick, traditionally sweet bouquet of winter fruits, most notably rich and saturating mulberry joined with wild blackberry, mildly acidic blueberry, and sour cherries which level off from a strong nose into an equally rich body. Composed of semisweet dark chocolate, carob, baked apple, and a yeasty head of rising dough, the bulk–a moderate and smoothly drinkable, flowing body, not dark or leaden–of the midsection tapers into cinnamon and cloves with a mixture of lemon and orange zest, albeit very mild citrus of the variety baked into pastry dough. The blend compares favorably with the structure of a well-made linzertorte, and in that balance serves as a representation of traditional western coffee, approachable with familiar flavors while presenting its own depth.
