Chiapas Mono Loco
Produced in Chimhucum in the highlands of Chiapas. Grown in high elevation and under shade in the mountains of Los Altos, the coffee cherry matures slowly. The result is a wonderfully bright and flavorful cup! The semi-washed process also enhances the coffee’s complexity.
Grown by members of the Tzotzil Indigenous group (descendants of the Maya!) using a variety of artisanal processing methods: hand-pulping, wooden fermentation, and sun-drying. This special attention to process ensures each batch retains it’s unique character!
