Red honey process? The coffee cherry has mucilage, a sticky, sweet, golden amber substance that's essential to the coffee's sweetness. The amount of mucilage left on the bean determines the shade of the coffee and its flavor profile. Miguel removes 15% of the mucilage. To ensure even drying the cherries are moved every 20 minutes for 9-11 days!!
Finca Los Papillos is a small farm, only 10 hectare acres. Finca Los Papillos belongs to the Cabezas Mora family. Miguel Angel Cabezas manages the farm with his son, Luis Miguel, and his wife Miriam Mora Salazar.
